Joe Boy - Smother Gumbo Wings


2 bags of chicken wings
1/2 bell peppper
4 stalks of celery
1/2 onion
2 cloves garlic
3/4 cup of plain flour
salt to taste
3/4 cup of oil
2 cups of cooked rice
2 cups of water


Make a roux by whisking the flour and 3/4 cup of oil in a large heavy saucepan over medium heat to form a smooth mixture. Cook until it turns a rich brown. Add water and vegetables, cook for 20 mins, and add salt to taste. Then pour cooked rice over the mixture. Let it simmer for 20 more minutes.
