1 lb Lentil Penne Pasta
1 Tbsp vegetable oil
1/4 cup EVOO ( extra virgin olive oil)
1 cup carrots small diced
1/4 cup onion small diced
1/2 cup squash medium diced
1/2 cup zucchini medium diced
1 tsp garlic peeled and minced
1 cup diced canned tomatoes w/ juice
2 Tbsp Brass Cuisine Chicken Seasoning
DirectionsToss cooked pasta in vegetable oil. Set aside.
Heat EVOO in medium skillet, add carrots and onions and sauté for 3-5 min. Add remaining vegetables and Season with Brass Cuisine Chicken Seasoning. Simmer for 10-15 min. Combine mixture and pasta together. Serve warm.
