Crawfish and Cheese Casserole


1 lb crawfish tails
1 stick butter
1 large onion, stick celery, a bell pepper chopped
1 bunch green onions chopped
1 can cream of mushroom soup
1 can cheddar cheese soup
3 cups cooked dirty rice


Sauté onions, bell pepper, and celery then add crawfish, simmer for 15 minutes, stirring often. Stir in soups and green onions, continue to simmer and stirring for 10-15 more minutes. Add dirty rice then place in greased casserole dish and top with cheese. Bake at 350 degrees until cheese melts.
