Crawdaddy Pot Pie


Yields: 8 servings

2 cans grands flaky biscuits
1# crawfish tails
10 small baby red potatoes halved
1 can sweet corn (drained)
1# andouille sausage
(Cut in slices)
1/2 small white onion (diced)
1 small pk button mushrooms
2 eggs
1/2 stick butter
1 tbsp Cajun seasoning
1 tsp sola
1/2 tsp salt
1 lemon zest


Place all ingredients except the biscuits into a bowl and toss thoroughly. Heat on medium in a large skillet gently stirring till potatoes are slightly tender. Set aside to cool.
You will need 2 Pie pans
Spray the bottom of the pans with butter spray, take 4 biscuits and place in pan and mash them to form against the wall of the pan, covering the entire pan. Take filling and evenly distribute between the two pans. Use the other can of biscuits to form a tops (8 biscuits per pan in total, 4 on bottom 4 on top). With sharp knife cut 3, 1 inch cuts in the biscuit dough. Preheat oven to 350 and bake for 14 minutes or till golden. Happy New Year!!
