Bacon Wrapped Boudin Stuffed Pork Tenderloin


Can be cooked in oven as well.

1 pork tenderloin
Tony Chachere 30 Minute Marinade
Seasoning of your choice
1 link boudin
3/4 pkg (12 oz) bacon slices
2 slices pepper jack cheese


Marinate tenderloin for 30 minutes. Season on both sides. Butterfly loin. (See instructions on Internet-easy)
Make a cut in boudin casing.
Remove filling. Lay bacon side by side and place tenderloin on top Place boudin on top of tenderloin. Place cheese on top of boudin. Roll up and Wrap bacon strips around as shown in photo and secure with toothpicks. Grill on 450 degrees for 3 minutes. Reduce heat to 350 degrees. Cook for 25-35 minutes keeping heat at 350. Check internal temperature. 150-155. (We undercook so if heating up doesn't dry out). Take off. Cover with foil and let rest for 5 minutes.
