Talking Food with Cory Bahr: Chicken Salad

I'm Corey Bahr and today we're talking chicken salad. Everybody loves these chickens. They're available at your local grocer. They're cheap. They're easy. You know they're just a convenience food nowadays. I think they make the best chicken salad ever. Today I'm going to show you how to do that with just a few simple ingredients. First thing we got to do is pick our chicken. We just take all the chicken off the bone, discard the skin, right into a bowl. We like it nice and chunky because I think it makes the best texture when it comes to chicken salad. Just tearing this rotisserie chicken into chunks. You want it really kind of bite-sized. Make sure you're watching out for any bones or cartilage while you're picking through a chicken. With our bones that are leftover from our rotisserie chicken, we just put them in a freezer bag, save them for later so we can make chicken stock. So we have our rotisserie chicken picked and kind of torn into bite-sized chunks. So we're going to start with our ingredients that we love to use. This is whole fat sour cream. Duke's Mayonnaise I love the consistency of Duke's. I think it has great flavor and a nice acidity that really pairs nicely. Couple of ingredients that we love, toasted slivered almonds. Right in there put a lot of we like a lot of flavor those almonds add a ton of flavor to the chicken salad. Celery, nice crunch, and brightness. Really vegetal. Fresh ground black pepper, celery salt. Mayonnaise is already a little bit salty, so you want to watch that celery adds a ton of flavor. And then some red grapes that are seedless that are cut in half. Lots of red grapes. This chicken salad is supposed to be chunky and full of flavor. With just a few simple ingredients. You got a dish they can you know hang out in the refrigerator for a few days whenever you're ready for a salad. You know just serve this over a bed of lettuce. Put it between a couple of slices of bread, you got a great sandwich. Also, a great snack when you're at work. There you have it. A simple, easy rotisserie chicken salad.
