Hey, y'all, I'm Chef Cory Bahr and today we're talking poke bowl. We're here in the kitchen at Standard Coffee. 523 Desiard in downtown Monroe. We just started serving some food down here. And we're trying to offer some things that are a little different. I think a lot of our viewers out there are eating healthier. It's the new year, you know, everybody's trying to reinvent themselves. So one of the things that we're doing down here in an effort to be healthier and serve healthier food, but also quickly is a poke bowl. But what differentiates ours and what will differentiate yours at home is the fact that we use healthy ingredients, brown rice and things like that. So if you just want to pick it up, let's knock it out. We serve brown rice with ours. We cook this fresh several times a day, I recommend using an instant pot. It takes all the guesswork out of cooking rice. So one of the first things we do, we're doing the peacemaker today, that's tuna and salmon, just a little bit of ponzu. That's a combination of soy and yuzu. Yuzu is a type of citrus in Japan. Used very common in Asian cooking. Some fresh ground black pepper.
We just tossed that let that sit for a second. One of the fun things that we're doing here is using some seaweed salad. Everybody loves seaweed salad. Fun ingredient. Tastes a lot like sesame to me, but uh, everybody loves it. It's got a nice little crunch. Let that marinate for just a second. It goes right over the brown rice. This is something light and easy for lunch that you can make it home. This is some of our spicy aioli that we make. And then we kind of dress it up with a lot of vegetables. These are some cucumbers that have been salted. Some shaved radishes, shaved red onion, and then we like to use for ... This is the kimchi flavor. This has all kinds of cool crunchy textures to it. You can get that at Saigon Market. Green onion and just tear off some cilantro.
