WEST MONROE, La. (KNOE) - When you think of food and drink pairing, people tend to think of wine and cheese. With pizza, beer is normally the answer you will get. Flying Heart Brewing and Pub is a place that takes a new approach to those classics.

Mollie Reynolds, the head brewmaster at the West Monroe location, is breaking stereotypes in the brewing industry. “I think one of the breweries down south has a female brewmaster. I know that there are a few in Texas, but it’s definitely few and far between,” said Reynolds.

She makes all the beer and root beer that is made fresh in-house that is all amazing from tap options. “The one that gets everybody’s attention is the Daywrecker because it is a 10.1% pilsner, and it drinks like a craft Miller Lite and has the alcohol content of a stout so,” said Reynolds.

The system Reynolds uses for brewing is different than normal. She even created a great Hazy IPA.

“They have a brewer in Bossier who was like, I’ve done it before but never on this system, let’s see what we can figure out, and he came over here and helped me out to do a batch for over here, and I was very, very happy with the final results,” said Reynolds.

When you grab a pint, pair it with some great food. Parker Kane, the manager, likes that they have options like salads and wraps. The one thing they have perfected is New York-style pizza, and they have some specials that are unique.

“I think one thing that really sets us apart is our monthly specials,” said Kane. “This month, we actually have a chicken curry pizza. It’s actually our dry rub. We have a curry dry rub for wings. So we made a pizza with that. It’s got like a pepper mix on it, and it’s got a little spice and cilantro.”

They even do a monthly rotating dessert that has a waffle and ice cream flavor.

They want the place to be relaxed and fun when people come in. “We make sure it’s a place where people are going to be comfortable and have fun where you know they feel like are Safford, their friends, where you know they can just come to hang out and relax.”

While doing that, order a pint of Flying Heart’s brews, grab a slice of pizza and feed your soul.
