Darrell Teats' Recipe for Breakfast Potato Casserole

4-6 med potatoes (peeled & diced)

1/2 small onion diced

1# pan sausage

2-4 eggs

1 cup milk

1cup shredded cheese

1tsp Italian seasoning

Tony Chachere's seasoning to taste

1 green onion chopped

Boil potatoes and onions until tender. Drain and place in casserole dish (spray dish with pan spray). Brown pan sausage, add 1 tsp Italian seasoning. Drain and cover potatoes with sausage. Wisk eggs, milk, and Tony's to taste. Pour over top of mixture. Spread cheese over top. Cover with foil and bake in 350 degree oven for 30 min. When last 10 min of baking, remove foil and sprinkle 1 chopped green onion. Serve hot. Enjoy.
