Mini Turkeys- Creole Fried Cornish Hens - Cajun Injector's Leo Honeycutt, guest cook

Cornish Hens are small and take a short time to cook, but are big on flavor! You may want to allow 1 Cornish Hen per person instead of 1/2.

Ingredients:
2 whole Cornish hens
6 oz Cajun Injector Creole Butter Recipe Marinade
Cajun Injector Cajun Shake Seasoning

Preparation:

Heat oil to 350 degrees. Prepare cornish hens while oil is heating.

Remove giblets and rinse Cornish hens with warm water. Drain cavity completely. WHIle oil is heating, inject Cornish hens using 1/2 oz of marinade in each breast, 1/4 oz into each leg and thigh. Rub Cajun Shake on outside and inside of Cornish hens. Place Cornish hens in basket and lower slowly into oil. Maintain temperature at 325 degrees. Fry for 10 minutes per pound of meat. Remove basket and place in a pan to drain of excess oil. Serve and enjoy!!
