Recipe: Pork loin and corn

MONROE, La. (KNOE 8 News) - The recipe of the day is pork loin with a side of cream cheese corn. It was made on Good Morning Arklamiss by Kayla from Kayla's Kitchen in West Monroe.

Pork Loin:

Orange or Apricot Marmalade

Seasoning Mix- Tony's, onion salt, garlic powder, and pepper

Orange Juice (about 1 1/2 cups)

Place your pork loin in a pan fat side up. Rub orange or apricot marmalade over the top of it, and if any is left over, leave it on top of the loin. Sprinkle the seasoning mix on top of the marmalade and then pour the orange juice all over top of it. There will be some remaining in the bottom of your pan. Cover the pan and cook the pork loin at 225 degrees for 4-6 hours. You can serve it over rice, or mix it with barbecue sauce when it is done cooking and make barbecue sandwiches.

Cole Slaw:

Mix together mayo, vinegar, pepper and sugar to taste. Pour it over a shredded cabbage mix, and mix it all together. Let the cole slaw sit for at least an hour.

Cream Cheese Corn:

2 cans whole kernel corn

1 block cream cheese

1 can Rotel tomatoes

Pinch of salt and pepper

3/4 cups green onions

Mix together all ingredients in a large bowl. Serve cold with chips, or hot as a side.
