Blueberry Muffins

Ruby's Blueberry Muffins

 

INGREDIENTS:

1 1/2 cups flour
1/2 cup sugar
1 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
Pinch of nutmeg
Pinch of lemon zest
1/4 cup heavy cream
2/3 cup buttermilk
1/2 cup vegetable oil
1/4 cup sour cream
1 egg
1/2 teaspoon vanilla
1 cup blueberries

MOP:

Preheat oven to 375 degrees.
 Whisk flour, sugar, baking powder, salt, baking soda, nutmeg, and zest in a large bowl. Whisk cream, buttermilk, oil, sour cream, egg, and vanilla in a separate bowl until smooth.
Fold the wet mixture into the dry with a spatula. Fold in the blueberries, being careful not to over mix.
Scoop into muffin pan and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Yields 12-15 muffins
