Huevos Rancheros (Eggs and Beans)

INGREDIENTS:
 
Pinto or kidney bean 1C cooked
Onion diced 1/2C
Garlic minced 2T
Olive oil 1/4 C
Chorizo sausage 3ozw
Chicken stock 1-2C
Eggs whole 1-2ea
Salt and pepper to taste
Flour tortilla grilled 1-2ea
Pork chop 8oz
Cumin 1/4 tsp
Chili powder 1/4 tsp
Oregano ground 1/4tsp
Ancho chilis ground 1/4T
Chipotle pepper 1ea chopped
Cilantro 2T chopped
Lime juice 1tsp
Romaine hearts grilled 1ea
 
MOP:
 
Saute 1/4 C onion, 1T garlic, beans and chorizo in 2T olive oil, add 1 C chicken stock and cook until beans are tender. Cook egg over easy with salt and pepper in 1tsp olive oil, remove from heat and set aside for service. Saute pork chop with 1/8 C onion, remaining garlic, cumin, oregano, chili powder, chipotle and ancho chilis. Brown chop on both sides and add remaining chicken stock. Reduce heat to low, cover and cook until tender. Do not cook off all of the stock, add water if necessary. Mix cilantro, lime juice, remaining onion and 2 T olive oil and set aside. Place cooked beans on plate, top with cooked pork, over easy egg and cilantro relish. Serve this with warmed grilled tortilla and chilled grilled romaine heart.
