Mediterranean Seafood Taco

INGREDIENTS:
 
Shrimp 4ea grilled
Rosemary minced 1tsp
Spinach tortilla or pita 1ea fried
Sun dried tomato chopped 3T
Cherry peppers chopped 2ea
Roasted garlic 6ea chopped
Black olive chopped 2T
Red onion chopped 2T
Cherry tomato chopped 1/4C
Feta cheese 1T
Olive oil 1/4C+1T
Spinach clipped 1/4C
Lemon juice 2T
Mayonnaise 1T
Chickpea cooked and pureed 1/4C
Tahini 1T
Jalapeno minced 1ea
Greek yogurt 1-2T
Salt & pepper as needed
 
PREPARATION:
 
Coat shrimp with 1T olive oil, rosemary and s&p, grill until fully cooked and set aside. Combine sun dried tomato, cherry pepper, 3 cloves roasted garlic, black olives, red onion, cherry tomato, 1/8 C olive oil, 1T lemon juice and salt and pepper and set aside. Mix chickpea, tahini, mayonnaise, jalapeno, remaining lemon juice, 3 garlic cloves and salt and pepper as needed. To assemble place shrimp, spinach sun dried tomato mixture, chickpea puree, yogurt and feta cheese in fried spinach tortilla and enjoy!
