Ingredients: 2 cups chopped spinach 1 chicken breast (season & boiled) shredded 4 oz cream cheese (softened) ¼ cup sour cream ¼ cup shredded cheddar cheese 2 Tbsp parmesan cheese 1 egg or egg beaters 4 flour tortillas
Method of Preparation: Preheat oven to 425º. Place tortillas on greased baking pan. Brush tortillas with egg & place in the oven for 2-3 minutes. Combine spinach, chicken breast, cream cheese, sour cream, & half of the shredded cheese. Spread lightly over tortillas & sprinkle remaining shredded cheese & parmesan cheese on top. Bake for 6-10 minutes or until cheese melts. Serve hot.
