Crepes Suzette

Ingredients
Flour 1/2 C
Eggs whole 2ea
Heavy cream as needed
Sugar To taste
Vanilla 1tsp
Butter(melted) 1/8 C
Vegetable oil as needed
Honey 1/4C
Lemon, Orange, and lime zest 1T
Lemon, orange, and lime juice 2T
 
Method of preparation
combine flour, eggs, sugar, vanilla, butter and enough heavy cream to create a very loose batter(batter should resemble egg nog). Pre-heat non stick sauce pan over med-high heat 1T oil and pour 1-2 oz of batter into sauce pan. Make sure to thinly distribute batter over whole diameter of pan. Cook crepe until firm and browned and then flip to other side, brown and remove from sauce pan. For syrup combine all other ingredients and drizzle over hot crepe.
