Shrimp and crab terrine

Shrimp Terrine Ingredients
Shrimp 10-12 ea 16/20 ct preferred ( tail removed, butterflied and pounded flat)
Crab 3ozw (jumbo lump preferred)
Smoked sausage 3ozw Ground
Bread crumb 2ozw
Parmesan grated 1ozw
Dijon 1T
Green onion 2ea minced
Garlic clove 1ea minced
Egg 1ea
Salt and pepper as needed
Horseradish cream Ingredients
Horseradish grated 1ozw
Sour cream 1/2C
Mayonnaise 1/4C
Dijon 1tsp
Shallot minced 1/2 ea
Salt and pepper as needed

Method of Preparation
For terrine lay pounded shrimp on saran wrap with edges of shrimp slightly overlapping each other. Mix all other ingredients together making sure mixture resembles a heavy cookie batter. Put a line of the stuffing in the center of overlapping shrimp, from one end to the other. Make sure you have 3/4 - 1in of shrimp showing on either side of batter. Then roll shrimp with saran wrap around stuffing, twist ends of saran wrap and secure. Then steam shrimp creating the shrimp roll. Chill and serve with horseradish cream. For horseradish cream mix all ingredients together and chill. Thanks and enjoy!
