Clams Cataplana

Ingredients:
Clams 2# fresh
Peas 6ozw (frozen works)
Ham diced 6ozw
Onion diced 2ozw
Garlic minced 1ozw
Olive oil 1/4C
Butter 2ozw
White cooking wine 1/3  C
Chicken or seafood stock 2C
Saffron threads pinch
Salt and pepper to taste
 
Method of preparation:
Over med-high heat put 1/8C of olive oil in a sauce pot or deep sauce pan. When oil is heated add clams and saute for about 2-3 min. Deglaze pot with wine and stock. Continue to cook clams in liquid until clams are opened. Pour clams and liquid into a separate container off of heat. Return sauce pot to heat and add remaining olive oil. When oil is hot add onion, garlic, peas, ham and saute until onion turns translucent. Add saffron threads and butter and continue to cook for an additional 2 min. Pour clam liquid back in sauce pot and let liquid reduce by 1/4. When it has reduced by 1/4 place clams in a serving bowl and pour liquid along with other ingredients over clams. Serve with some good bread and enjoy!
