Pan Fried Crab and Pasta Pepperoncini

Pan fried Crab
Soft shell crab (cleaned) 3ea
Seasoned flour 1-2 C
Egg wash 1/4C
Vegetable oil 1qt
 
Pasta Pepperoncini
Pasta fettuccini 1# cooked
Olive oil 3T
Butter 3T
Shallot 2ea chopped fine
Garlic clove 2ea chopped fine
Tomato 2ea diced
Sun dried tomato 1/8c cut in strips
Capers 2T
Kalamata 1/4 C sliced in 1/2
Green olive 1/4 C rough chop
Pepperoncini peppers (salad peppers) 1/4C rough chop
Basil fresh 3T chopped
Ham chopped 1/8C
Chicken stock 1/4 C
Parmesan cheese shredded 2-3T

For crab dip crab in flour, then egg, then back in flour and place in shallow frying pan with just enough grease in pan to cover crab . Make sure grease is 350F(use a thermometer). Fry crab until golden brown and set aside on paper towels to drain. For pasta first saute garlic and shallot in olive oil and butter over med-high heat in a skillet. Once shallot is translucent add all other ingredients except pasta and cheese. Saute these ingredients for an additional 5 min over med- high heat. Add chicken stock and pasta and continue to cook until pasta is heated through. Once pasta is hot place pasta mix on plate, top with crabs and shaved or shredded parmesan cheese. Serve with toasted crostini. Enjoy! and God bless.
