Seafood Enchilada de-constructed

Seafood & sauce ingredients
 
Lobster 3ozw chopped
Shrimp 3ozw chopped
Mussels 2ozw whole(steamed until open) reserve liquid 
Shallot or onion 1ozw chopped
Garlic 2cloves chopped
Chicken stock 1/4 C
Olive oil 3T
Boursin cheese 3ozw
Cream cheese 2ozw
Salt & pepper as needed
 
Salsa Verde ingredients
 
Tomatillo grilled or roasted and chopped 2-3ea
Onion 1/4 ea chopped fine
Garlic clove 1-2ea chopped fine
Cilantro 2T chopped
Lemon juice 1T fresh squeezed
Jalapeno 1/2-1 ea chopped fine
Salt and pepper to taste
Olive oil 2-3T
 
 
method of preparation:
 
Fried corn tortilla bowl pre- made or fry yourself 2ea
 
For seafood saute onion and garlic in olive oil over med-high heat. Add seafood after 2-3 min and continue to saute until seafood is almost cooked through, about 4-5min. Add liquid from mussels and chicken stock. Bring to a simmer and then add cheeses and reduce heat to low. Continue to cook until mixture thickens. Ad  S&P and remove from heat and set aside. For salsa combine all ingredients and mix thoroughly. To serve place seafood mixture in tortilla bowl(fried tortilla) and top with salsa. Thanks and Enjoy!
