Catfish cakes

1lb catfish fillet
1 med. Onion, chopped & sauteed
1 tp yellow mustard
1 tbsp ranch dressing
1/2 tp old bay seasoning
2 1/2 cups crushed Ritz crackers crumbled
1 egg
1 cup vegetable oil (for frying)

Method of preparation

Place catfish in sauce pan with enough water to cover. Bring to a boil & cook until fish flakes with a fork. Drain water & mash up fish. Stir in remainder of ingredients. Mix until evenly blended. Heat oil in large skillet over medium to high heat. Form fish mixture into patties. Fry until golden. Drain on paper towel & serve hot.
