Crawfish Fettuccini

  • 1/2 bell pepper, chopped
  • 1 onion, chopped
  • 1 bunch of green onions, chopped
  • 4 stalks celery,
  • chipped 1 pod garlic, minced
  • 1 stick butter
  • 2 tbsp. olive oil
  • 2 tbsp. dried parsley
  • Flour
  • 1 lb Mexican Velveeta
  • 1 pt. half and half
  • 16 oz box fettuccini noodles
  • Fresh grated parmesan cheese
  • Salt and pepper to taste
  • Tony's to taste


Sauté vegetables in butter and olive oil until transparent and tender Add parsley and crawfish; cook for 10 minutes. Stir in flour and half and half. Add cubed Velveeta and simmer on low until cheese is melted. Cook noodles and drain. Pour noodles into 9x13 inch baking dish. Sprinkled a little Tony's on noodles , tossing into mix. Pour crawfish sauce on noodles and stir gently to combine. Season to taste. Cover with foil and bake 350 degrees for 30 minutes until bubbly. Remove foil and top with grated parmesan cheese. Return to oven for 5 minutes.
