Roasted Corn Guacamole

Ingredients:

  • 2-3 avocados
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped red onions
  • 2 ears or 1/2 cup of frozen corn
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon crab boil seasoning
  • Salt to taste

Directions:


Cut corn and roast in oven at 350 degrees, with the olive oil and crab boil seasoning, for 20-25 minutes.

When done, blend all the ingredients together and serve with tortilla chips.
