Buffalo Chicken Canape
Season Chicken with salt and pepper and grill or saute in skillet until internal temperature of 165f is reached. To prepare hot sauce, mix tabasco, honey, worcestershire, creole mustard and paprika together. Drizzle 1/3 of hot sauce mixture over chicken when done cooking, let chicken cool and cut into strips. For hot sauce aioli, mix remaining hot sauce mixture with mayonaise and set aside. To assemble canape place toasted baguette or cracker down on plate, place slice of blue cheese on toast, top with slice of chicken, some of hot sauce aioli(mayo), and finish with celery strip.
Smoked Goat Cheese and Chive dip
Saute shallot, gherkin and garlic in oil and mix with all other ingredients. Add salt & pepper to taste. Serve with crackers or toasted baguette. Note: Smoke goat cheese in a pan on grill with whatever wood chips you prefer.
