Chicken Pork Melts

  • 4 Boneless Chicken Breasts or Pork Chops
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp chili powder
  • ½ sweet onion, sliced
  • ¼ lb large button mushrooms, sliced
  • 4 slices Pepper Jack cheese
  • ¼ tsp Tony's Chachere's seasonings
  • 2 Tbsp olive oil
  • 4 thick slices of bacon
  • Salt
  • Pepper 


Mix seasonings together in a small bowl. Heat oil in non-stick skillet one that can be placed in the oven on medium heat. Coat one side of meat with seasoning mixture and place in skillet, seasoned side down. Then sprinkle the other side with remainder of seasoning.

Scar both sides about 3 minutes on each side, remove from heat and place skillet in 310° oven for 20 minutes (cover with foil after about 5 minutes). In another non-stick skillet, place 1 tsp of olive oil and cook bacon until crispy. Set aside saving drippings, add sliced onions and mushrooms, sauté for about 10 minutes.

With 10 minutes remaining on meat, remove from oven, turn oven to broil. Spoon onion and mushroom on top of meat then add bacon and cover with cheese. Return to oven and broil for 5-10 minutes or until cheese melts. Remove from oven and serve hot.
