Shrimp Scampi (Capellini con gaberetti)
Shrimp 16/20 ct 1/2#(peeled and de veined)
Green onion 2ea (chopped)
Garlic Clove 2ea (chopped)
Olive oil 2T
Butter (unsalted) 3ozw
White wine 1/8C
Lemon juice 1/2 ea (squeezed)
Lemon pepper (to taste)
Heavy cream 1/8 C
Angel hair 2C (cooked and shocked)
Prosciutto (sliced thin and fried) 1ea
Bread round 1ea
Saute shrimp in olive oil and butter, add green onion and garlic and continue to saute until shrimp are opaque(pink).
Add white wine, lemon juice, heavy cream and lemon pepper. Continue to cook until sauce thickens. Toss angel hair into shrimp mixture. Place in bread round and top with prosciutto crisp. Garnish with lemon and green onion. For bread round slice baguette bread lengthwise, wrap around individual muffin slot and bake at 350f until golden brown and delicious.
