Breakfast Tarts

1lb pan sausage

3-4 Tbsp chopped green onions

3 eggs lightly beaten( add salt and pepper to taste )

1/2 cup shredded cheddar cheese

1 package can biscuits

Pre-heat oven to 350 degrees. Brown sausage and green onions in large skillet. Add eggs to sausage, cook until eggs are done, about 3-4 min. Set aside. On a floured sheet, roll biscuits to about 6 inches across, save 2 biscuits and cut in quarters to use for toppers. Use a non stick cooking to coat a muffin pan. Place rolled biscuits in pan, sprinkle cheese in bottom of each biscuit. Spoon in sausage and egg mixture in each and sprinkle remaining cheese on top. Roll out biscuit quarters (thin) and place on top of each of filled biscuits. Using a fork, press around edges and poke holes in top. Bake in oven for 15 minutes and a lightly golden brown. Butter top of tarts, pop out of pan, and Enjoy!
