Rustic Desert Burger with Salsa Verde and Roasted Corn Mayo




Ingredients

Desert Burger

Ground beef 5lbs
Celery(diced) 3 ribs
Red bell pepper(seeded and diced) 2 ea
Yellow onion(diced) 1/2 ea
Bread crumbs 1C
Chipotle peppers 2ea
Worcestershire sauce 1/4 C
Dijon mustard 1/4C
Eggs 4-6ea
Heavy cream 1/4C
Cumin 2T
Chili powder 4T
Oregano 4T
Salt & Pepper 2T
Olive oil 3T
Fried flour tortilla(6") 6ea

Corn Mayo

Roasted corn 2C
Mayonnaise 1/4C
Salsa verde
Poblano pepper(roasted, seeded and diced) 2ea
Tomatillo (peeled , washed and diced)4ea
Onion (diced) 1/2ea
Garlic clove (diced) 3ea
Cilantro(chopped) 1/4C
Avocado(peeled and diced) 1/2ea
Green onion (diced) 3ea
Jalapeno (diced) 1/2ea
Olive oil 4T
Lime juice (fresh) 1/2 ea
Salt& pepper to taste

Directions

For burger, Mix all ingredients together, form into patties and grill or saute in a pan with olive oil until browned on each side. Place in 350F oven and cook until internal temp of 155F is reached. While hamburger is cooking mix all ingredients for salsa verde and set aside . Remove burger from oven , top with pepper jack and place on top of fried tortilla . Drizzle with salsa verde, corn mayo and serve. For corn mayo mix all ingredients and set aside
