Insalata Di Pollo




Ingredients

Chicken breasts (4-5ozw ea) 3ea
Olive oil 6T
Oregano dry 1T
Basil dry 1T
Red pepper flake 1tsp
Feta cheese crumbled 1/4C
Tomato (washed and diced) 1/2ea
Boiled egg(chopped) 2ea
Baby spinach (fresh) 2C (1C fried)
Gherkins(chopped) 6ea
Sun dried tomato 1/4C
Garlic pods 10ea
Capers 2T
Yellow onion(small) 1/4ea
Balsamic vinegar 2T
Mayonnaise 1/4-1/2C
Salt & pepper to taste
Pizza dough (thawed, not proofed, 14" round) 1ea

Directions

Rub chicken breasts with 3T olive oil, oregano, basil, salt&pepper and red pepper flake and grill until 165f internal temp is reached. Place in refrigerator to cool. When cooled to 40f chop chicken breasts.

Roast 7 pods of garlic in 350f oven with 1T olive oil until browned. Slice 3 remaining garlic pods very thin and fry in 350f grease until golden brown. Add remaining ingredients to chicken except for 1C fried spinach, fried garlic and pizza dough. Mix all ingredients thoroughly and set back in refrigerator.

Rub pizza dough with remaining olive oil and grill until cooked through(should take approx 2-3min on ea side). Let pizza dough cool at room temp. Once cooled cut pizza dough into 4 pieces, top with scoop of chicken salad , then top chicken salad with fried spinach and fried garlic.
