Grain-Free Banana Pancake




Ingredients

2 Eggs, beaten
1 ripe banana ,mashed with a fork
1 teaspoon chia seed
1/2 tsp cinnamon
1 tablespoon honey
1 tablespoon coconut oil

Directions

Mix the eggs, banana, chia seeds, spices and honey until well mixed.
Heat coconut oil in skillet on medium high Pour "batter' into skillet and cook like a pancake, typically 1 or 2 minutes on each side. .

Best eaten right away. (May substitute 1/2 cup cooked sweet potato for banana.)
Top with maple syrup, almond butter or a dollop of yogurt..

MAKES 1 LARGE PANCAKE
