MONROE, La. Christmas is right around the corner, and before you prepare to make your signature pumpkin pie don't toss out those pumpkin seeds just yet. Try roasting them in the oven for a healthy snack! Pumpkin seeds are a great source of vitamins and minerals. They can be boiled, baked, or eaten raw.
